Bush and weed clearance in garden, replant new hedges

We have 3 or 4 slightly overgrown laurel bushes at the back of our garden which we would like to remove and replace with a new row of bushes that will provide good screening without taking over! We would also like to clear the ground level weeds in front of the bushes and gravel the area, possibly creaitng a little alpine garden, water feature or something like that.
