Dig out a very large bamboo plant

We have inherited a large bamboo plant which is starting to spread and we want to dig it out (if possible saving a bit to go in a pot). The roots/runners spread out over an area about 1.5 x 2m. They are quite thick and go down about a foot. So there is quite a large area of ground to clear as well as cutting dowm the plant itself.
