Garden tidy up and advice

Hi there, I have a front garden that currently has a border and a fence which is becoming too difficult to manage. I am thinking of removing the fence and extending the border to grow some shrubs and bushes. I also have a back garden that has a raised border round the garden. I have no idea what plants are in this (if any) and would like this probably cleared out with the exception of established plants and trees, and a variety of plants and flowers planted. As part of this advice on what plants to use would be required as my partner and I are clueless! We would obviously pay for any plants (happy to use recommended suppliers) and labour spent in the garden. Neither garden is big so I wouldn't expect this would take more than a days work. Thanks!
