Re plaster board and plaster kitchen ceiling

Re boarding on top of existing boards in kitchen / dining room area. Due to wallpaper on ceiling that is is over painted on / difficult to remove. Some damaged boards already removed. Messesy to remove the rest. Need to save time. Ceiling area is 11 feet wide by 18 feet long / the kitchen area is narrower at 8 feet. Would need larger boards for this ie 1200 by 2400. Looking to do this as soon as possible and as quick as possible. Rooms are furniture free and clutter free.
